Elban cuisine is based on simple dishes, where
imagination and skill play an important role
in the choice of ingredients; with the advent
of tourism, these dishes, at one time thought
to be “frugal”, are now considered
refined.

Some dishes requiring a long
and complex preparation are particularly elaborate.
One of these - stockfish as prepared in Rio
Marina - is a superb dish, with salted anchovies,
onions, tomatoes, basil, parsley, green peppers,
black olives, pine-nuts, capers and, obviously,
oil, paprika and salt.

Other excellent dishes
are cacciucco (fish soup), rice with sepia
ink sauce, stuffed sardines, mixed fried
fish, spaghetti with crab, scorpion fish
alla livornese, pappardelle with wild boar
or hare sauce, all accompanied by a good
Elba DOC wine.
