Elba Procanico DOC (or Trebbiano) is made from two different types of grapes: At least 85% of Procanico plus a maximum of 15% of other white grapes from authorized vineyards in the region of Tuscany.
Procanico is a special type of Trebbiano Toscano grapes that are easily recognised because they are pink in colour,have a high sugar content but that are produced to a lesser extent than the Trebbiano ones. The over 150 hectares have been in Elba for a very long time.
The vineyards are shaped like pruned-spur cordons with a maximum of 4000 bunches per hectare and a maximum of 90 q.li grapes per hectare.
The wine is normally kept steel tanks and the temperature during fermentation is watched over very closely for a period of 7 days; it is then left to settle then bottled in the spring following the grape harvest.
Since the harvest in 2011 it has been called Elba Procanico DOC.
