The amount of production of Vermentino is ever increasing, it covers 15 hectares, and more or less equals that of Procanico and Doc Bianco grapes. Since the grape harvest in 2011 it has been given the name of Elba Vermentino DOC.
An excellent Vermentino is produced by more than one firm on the Island of Elba and it has slightly different hues depending on the area where the grapes are grown and where the wine is produced.
strong>At least 85% of Vermentino grapes are used to make it, with the addition of a maximim of 15% of otherwhite berrygrapes that come from suitable and authorized vineyards.
The vineyards have the shape of pruned-spur cordons and produce a maximum of 4000 bunches/with a maximum of 90 q.li grapes per hectare.
The wine is usually left to mature in steel tanks and the temperature is closely watched over while it is fermenting, a process that usually takes about 7 days; the wine is then left to stabilize and is then ready to be bottled in the spring following the harvest.
