On the Island of Elba Saint Joseph's day is an important day because it is dedicated to all those who are a father and to all those who in Italy are called Joseph (Giuseppe).
Since it is not only one of the most heart felt traditions on the Island of Elba (and in all of Tuscany), people usually make the delicious rice fritters that is traditional on this very special day.
500 gr of boiled rice, 350 gr of flour, two eggs, one sachet of yeast for baking, one glass of "Sassolino" (Aniseed) liquor, grated lemon rind.
Boil the rice in lightly salted water the day before you intend making the fritters; leave it to absorb the water without draining it but don't leave it too runny.
Next day, put the rice in a bowl and add all the ingredients: the flour, the two eggs, the yeast, the glass of Sassolino, the lemon rind, then mix well.
Put oil in a high-sided pan and drop spoonfuls on the misture in, but be careful that the fritters don't stick to the bottom of the pan.
Remove the fritters as soon as they are golden and drain any excess oil on a sheet of kitchen roll. Sprinkle caster sugar over the San Giuseppe fritters and serve hot.
