The flavours of the typical Elba cuisine are based on simple dishes, often linked to the farming tradition, the agriculture one as well as the sheep farming one..In the past sheep farming was very important in Elba, and proof of this is the fact that [page id="1165"]many caprili (sheep enclosures) can still be seen today, above all in the western part of the island.
Sad to say that this tradition, with the upcoming of tourism, has somewhat got lost, but in more recent years it has made a comeback with the aim of discovering local Elba dairy products,
In the small farms on the territory both goats and sheep are bred, and delicious cheeses and ricottas with their intense, inviting flavour are made. All the animals are bred in a natural way and the cheeses that are made are all top quality, following a traditional method and in full respect of the environment.
