Cauliflower with anchovies is one of the most popular dishes prepared before the religious festivities .It is a must for the Chrismas Eve dinner, and In winter, you can replace the cauliflowerkale.
Ingredients for 6
p>Approximately 1 kg of cauliflower, 12 salted anchovy fillets, 3 cloves garlic, a handful of chopped parsley, 3 tablespoons white wine vinegar, oil, chilli peppers, salt.
Method
Rinse the cauliflower and its leaves under running water and and remove the harder ones.
Cut a small cross in the stem and boil in salted water. Remove while still slightly undercooked and leave to cool.
Cut the cauliflower into medium sized pieces and slice the leaves. Place in a large bowl then add the chopped anchovy fillets, the chopped garlic, the chilli peppers and the chopped parsley.
Dress it with extravirgin olive oil and wine vinegar according to taste. Serve hot or tepid.
If you like, the dish can be enhanced by adding capers, hard boiled eggs, tinned tuna fish etc and can be considered an exquisite and nourishing main dish.
